Cabbage Salad with Lemon Dressing

Makes- 6 cups (6 people)


  • 1 small green Cabbage, finely shredded
  • 1 small green Cabbage, finely shredded
  • 2 carrots, peeled, coarsely grated
  • 10 whole walnuts, chopped
  • 4 shallots, trimmed, diagonally sliced

For Lemon Dressing

  • 30 ml olive oil
  • 1 garlic clove, crushed
  • 30 ml lemon, juiced
  • 1 tablespoons chopped fresh continental parsley
  • Salt & freshly ground pepper


  • Place the green cabbage, red cabbage, carrots, walnuts and shallots in a bowl. Toss well to combine.
  • To make the dressing, whisk the olive oil, garlic, lemon juice and parsley together. Season with salt and pepper.
  • Add the dressing to the salad and toss until well coated. Serve.
